"These days, it is hard to find authentic royal Malwa cuisine in India. While some families have forgotten their gastronomic heritage or have safeguarded their recipes, the cuisine has never reached the masses. I have been fortunate to meet these illustrious families, and have also enjoyed a meal with them. I will create dishes with help from recipes sourced from friends, extended family and my mother, that have all been compiled over the years," says the 30-year-old ex-advertising professional, who hosted the first pop-up last year, but took a sabbatical to return with the upcoming edition, an exclusively non-vegetarian affair. "When we do a combined meal, logistically, it becomes difficult to offer a totally different set of menus and we end up serving a common raita, dal, pulao and dessert. However, here, we will serve Kaleji Ka Raita, Maans Ka Zarda Pulao and Ande Ka Halwa. So, it's a more intense meal," she informs.

In the film, El Diablo/Chato Santana is played by Jay Hernandez (from two of the “Hostel” movies, “Bad Moms”), who stars alongside Margot Robbie as Harley Quinn, Will Smith as Deadshot and Jared Leto as the Joker.

This Sunday, if you walk into Bandra's Temperance Studio, you'll be engulfed by the aromas from a royal kitchen, as spice-rich scents of Khade Masale Ka Maans, Mawa Murge Ki Kachori and Zarda Pulao will waft through the air. After all, these dishes were part of the royal cuisine of the Malwa region, also known as warrior meals, since Marathas and Rajputs typically enjoyed them. Recreating 14 of these varieties under her venture Charoli: From The Royal Kitchens Of Malwa is Indore-born, Mumbai-based chef Anuradha Joshi Medhora.

Located in central India, the Malwa region — name derived from Malav, which literally means a part of abode of Laxmi — was invaded by the Mughals, controlled by the Rajputs and ruled by the Marathas. "Dewas, Jaora, Ratlam, Sitamau, Sailana, Gwalior, Indore, Tonk and about 35 small estates and holdings have all contributed to Malwa's culinary heritage," she says, adding, "Our cuisine is the traditional cuisine of the royals of Malwa and not the locals, which is starkly different. The royals ate more exotic fare with game meat or in the later years, a cuisine influenced slightly by the Europeans. However, they widely used local ingredients like corn, wheat, wild figs, red chillies and onions. The cooking techniques include dhungar (smoking) method, bhuno-ing (dry-roasting) and dum (slow-cooking with steam)."
